Named directly in the speedrunner’s route notes (“the Mori fight”) and independently in two reviews. It isn’t a cameo — the run ends here.
A reviewer’s own words: “little bullet hell elements”. No review in the English set uses the word “melee” — the fight is described as dodging patterns, not trading hits.
Seven of the 41 English reviews mention the boss; two of those name Mori Calliope directly, and one of those two is just her name in capitals with three punctuation marks. No level in the demo gets named that often.

Open questions
These get answered on release day, by playing. Not before.
No source describes a phase transition. It could be one continuous pattern set.
One reviewer explicitly hopes so. Nothing official either way.
The store page says “unique and challenging boss fights”, plural. She may be the tutorial of the set.
The community’s fastest runner says he has “barely any kind of strategy” against her. Nobody has solved this publicly yet.
What to do until then
If you’re playing the demo now and want the crown, the practical advice from players who got it is narrow but real: the no-damage run is achievable in a short session, and the thing most likely to ruin is not the boss but the cutscene damage above. Everything else you will read about this fight, including on other sites, is inference from footage.
